what you need
  • 2 eggs, beaten
  • 2 lb. ground deer meat
  • 1/2 cup chopped white onion
  • 1 tsp. ground mustard
  • 2 Tbsp. Worcestershire Sauce
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. garlic powder
  • 2/3 cup Italian bread crumbs
  • 1 can (8 oz.) tomato sauce, divided
make it
Preheat oven 375°F. Beat eggs in a bowl. Add ground deer meat, onion, ground mustard, Worcestershire sauce, salt, black pepper, garlic powder, Italian bread crumbs and 1/2 can of tomato sauce.

Use your hands and mix until all ingredients are blended. Shape mixture into a loaf. Place in loaf pan.

Cook 1 hour. Pull meatloaf out of oven and pour the remaining tomato sauce over the top. Cook for 20 minutes.
Notes
1. Just a reminder that deer meat has less grease than beef!!
2. Make ahead and allow uncooked loaf to set overnight in refrigerator.
3. Leftovers.... Meatloaf sandwiches (add hot pepper jack cheese) and French fries for a quick meal.
