Acorn Squash & Brown Sugar

what you need
  • 2 acorn squash
  • Water
  • 4 Tbsp. Butter
  • Brown sugar
  • Pecans
make it
Cut acorn squash down the middle from top to bottom. (This gourd is very hard so be sure to use a sharp sturdy knife.) Spoon out the seeds and pulp.

In an 8x8 glass baking dish, fill half way with water. Lay acorn squash cut side facing down into water. Only two halves will fit into dish. Cook in microwave for about 20 minutes. When done, place remaining two uncooked halves in microwave and cook for 20 minutes. You may gently squeeze the excess water out after cooked squashed has cooled to be handled.

When done use a spoon to scrape squash away from its shell. Be careful not to puncture the outside skin for this will be used to serve the squash. Top with butter, brown sugar, pecans and enjoy!
Notes
If you love sweet potatoes then you will love this! It has a very similar taste.
