All-In-One Italian Chicken and Veggie Dinner

what you need
  • 4 boneless skinless chicken breasts
  • 2 potatoes
  • 1 large tomato
  • 20 baby carrots
  • 1 yellow onion
  • 1 cup Italian Dressing

Preheat oven to 350. Tear 4 sheets of tin foil, approximately 16 inches long. Spray each sheet with non-stick cooking spray, and place chicken breast in the middle of each sheet.

Dice potatoes, tomatoes, and baby carrots; distribute evenly among chicken breasts. Slice onion thinly and lay across each chicken breast (you don't need to use the entire onion). Lightly pour Italian Dressing over veggies and chicken (add more if necessary). Pull sides of foil together and seal. Poke holes in the top of the foil.

Place in the oven for about 35 minutes or until chicken is cooked thoroughly. You can add any vegetables, spices, etc. For a tasty zing, squeeze a couple lemon slices over the dressing and leave the slices in with other ingredients.
It's not a lot of work, just a matter of throwing different ingredients in. The Italian dressing makes all of the veggies have a different flavor, very tasty!
