Amish Chicken Casserole

what you need
  • 1/2 cup butter
  • 1/3 cup flour
  • 1 cup milk
  • 2 cups chicken broth (may use canned)
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1 (4 oz.) can mushrooms, drained
  • 2 cups leftover cooked chicken, cubed
  • 8 oz. noodles, cooked
  • 1/3 cup parmesan cheese, grated
make it
Melt butter, then add flour and stir until smooth. Gradually add milk and broth, then seasonings and mushrooms. Combine chicken, cooked noodles and prepared sauce.

Put in an ungreased 9x13" baking pan and top with parmesan cheese.

Bake at 350ºF for 35-45 minutes, or until heated thorough and top is browned slightly.
May cook for less time if you prefer. Cooking longer just makes it crisper rather than creamier.
