Angie's Fish Tacos

what you need
  • 1 medium size salmon filet, cut into 3 or 4 (2-inch wide) pieces
  • 1 stick butter
  • 2 lemons
  • Salt & pepper to taste
  • 1 roma tomato
  • 1 yellow tomato
  • 1 orange tomato
  • 1/4 cup cut up cilantro
  • 1/4 tsp. garlic salt
  • 1 cup shredded cabbage
  • 1 cup Kraft Shredded Colby Cheese
  • 1 bar (8 oz.) cream cheese
  • 1/4 cup sugar
  • 1 lime
  • 8 corn tortillas
make it
Place each cut up salmon filet on foil large enough to wrap each individual filet in. Place 2-3 pieces of cut up butter on top of each one. Place 1-2 lemons slices on top of butter pieces and sprinkle salt and pepper on top.

Wrap up and bake in 350* oven for 30-35 minutes. While the salmon filets are cooking, cut up tomatoes into small cubes, place in medium bowl and add cilantro, salt, pepper and garlic salt. Cover and refrigerate until ready to use. (Shred your cabbage and cheese now if it is not already prepared that way and set aside)

When the filets are done, open the foil to cool off a few minutes. Use a fork to flake off each filet from it's skin into a large bowl.

Place cream cheese in small bowl and microwave until just soft, about 30 seconds. Add sugar to cream cheese and stir. Cut lime in half and squeeze over cream cheese mixture and mix well.

Warm tortillas in microwave, placing a damp napkin in between each tortilla, topping the last one with a damp napkin. Heat for 30-45 seconds.

To Serve: Place a spoonful of fish on tortilla, top with cheese, cream cheese mixture, salsa and cabbage. (If you want, squeeze some lime on top) Fold and enjoy this fresh flavor.
Notes
You have never tasted a fish taco like this. I made this up in my own kitchen and it is a family favorite, no restaurant comes close to a fish taco like this!

Rated  by 1bear143 on 4/12/2005 What a fresh tasting fish taco, full of flavor that is like a party in your mouth! Love it and so did my guests, this is by far the best tasting fish taco I've had at home or at a restaurant and I even left out the Colby cheese
