Angie's Homemade Chicken Pot Pie

what you need
  • 2-3 lb. cut up boneless skinless chicken breast
  • 2 Tbsp. olive oil
  • 1/2 cup chicken broth
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 1 can mixed vegetables
  • 2 (9 inch) pie crusts
make it
Brown chicken in oil. Add remaining ingredients and heat until smooth.

Pour into pie crust and top with second pie crust.

Bake at 350°F for 40 minutes or until crust is light brown. Let cool 5 minutes, and then serve.
You can substitute the cream of celery for cream of mushroom. You can also substitute frozen vegetables in place of the can vegetables.

For the chicken broth, I recommend 1 tsp of L.B.Jaminsons. You can use bouillon cubes.
