what you need
- Meatball ingredients:
- 1 pound meatloaf mix (ground beef, pork, & veal)
- 1 cup unseasoned bread crumbs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 small minced onion
- 1 clove minced garlic
- 2 tablespoons grated Romano cheese
- 3/4 cup water
- 2 eggs
- Sauce Ingredients:
- 1 can (28 ounce) tomato puree
- 2 cans (18 ounce each) tomato paste
- 2 quarts water
- 1 1/2 teaspoons salt
- 1 teaspoon fresh ground pepper
- 1 Tablespoon baking soda
- 1 1/2 tablespoons sugar
- 1 tablespoon oregano
- 2 dried bay leaves
- 1 medium onion, sliced
- 2 cloves garlic, chopped
- Olive oil for sauteing

Mix all of meatball ingredients. Form into balls about 2 inches round. Set aside on plate.
In an 8-quart stock pot combine all sauce ingredients (except onion, garlic and olive oil), stir until smooth. Place on medium heat until starting to boil, lower to simmer.
In a frying pan saute onion and garlic in olive oil until translucent, add to sauce. In same pan brown the meatballs on all sides and add to sauce. Simmer for 2 1/2 hours stirring frequently.
Notes
If thicker sauce is desired add a 6 ounce can of tomato paste. If thinner sauce desired add more water.
Salt and pepper can be adjusted to ones taste.
