Arroz Con Guandules

what you need
  • 4 cups water
  • 2 cups long grain rice
  • 2 packs red coloring (goya sazon)
  • 1 spoonful sofrito
  • 1 can goya guandules with water (pigeon peas)
  • Dash of salt
  • 1 Tablespoon adobo
  • Pitted green olives
make it
Put water in pot and allow it to boil. Add rice first, then slowly add all ingredients.

Keep lid on pot for first 5 minutes. Allow it to continue to boil then bring heat down to low and let it simmer for 20 minutes. DO NOT REMOVE LID.

When it finishes it should be a nice yellowy redish color. Add salt and pepper as needed.
Sofrito can be purchased in the ethnic aisle in any supermarket. It comes in green and red. For this dish I recommend the green. Sazon and adobo can also be bought in the hispanic aisle in the grocery store.

Rated  by ronniemex22 on 4/26/2005 I tried this rice for the very first time and it came out very good! It was fast and easy! Anyone could make this latin rice and it will come out if you follow the recipe.
