Makes: 4 servings Total Time: 30 min
Category: Breakfast/Brunch Sub Category: Other

what you need
  • 1 cup rice
  • 3 - 4 sticks cinnamon
  • 2 cups water
  • 1 can (12 oz.) evaporated milk
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
make it
Boil rice, cinnamon sticks, and water. Boil on low heat, for 10 minutes. Boil until most of the water has been absorbed. Remove cinnamon sticks. Continue to cook, on low heat.

Add evaporated milk, slowly; ½ cup (4 oz), at a time. Continue to cook and stir, for an additional 10 minutes. Add sugar and vanilla. Stir and remove from heat.

Add 1 cup of cold, whole milk. Stir and serve, warm and toasty!
This is a "Traditional Mexican" recipe that my grandmother used to prepare for all her grandchildren, on very cold winter days! It was mostly served at breakfast time, but we occasionally begged her to make it as a dessert, too! Mmmmm! : )
