Aunt Liz's Lime Cucumber Salsa

Makes: 3 cups of salsa Total Time: 2 hr 15 min

what you need
  • 3 large cucumbers
  • 1 or 2 cloves of garlic
  • 1 jalapeno pepper
  • 3 green onions
  • 2 Tbsp. fresh cilantro
  • 2 Tbsp. lime juice
  • 2 Tbsp. olive oil
  • 1 tsp. salt
  • 1/4 tsp. pepper
make it
Seed and dice the cucumbers, mince the garlic, finely chop the jalapeno, chop the green onions, and mince the cilantro.

Place everything in a large bowl and mix.

Refrigerate at least 2 hours. Serve cold with white corn chips.
Notes
Fresh cilantro and freshly squeezed lime juice is the key to great salsa!

Beware the jalapeno juice when you chop it up.

I used some home-grown cucumbers, which were hardly 'large', but I made do. :) I'm not big on spicy, so I omitted the jalapeno and added some home-grown green pepper, plus a bit of tomato (also home-grown) and I couldn't stop eating this stuff!!!
