Avocado Corn & Bean Salsa

what you need
  • 1 can black beans, drained and rinsed
  • 1 can Mexican corn, drained and rinsed
  • 2 tomatoes, diced
  • 2 avocados, cut into chunks
  • 1 small onion (or 3 green onions), diced
  • 1 clove fresh garlic, minced
  • 2 Tbsp. fresh cilantro, minced
  • Juice of 1/2 lime
  • 1/2 cup canola oil
  • 1/4 cup white balsamic vinegar
  • 1 packet Good Seasons Italian salad dressing
make it
Mix together all ingredients about four hours before serving to allow flavors to blend.

Serve with tortilla chips.
A really big hit with almost every person who loves cilantro and salsa - not spicy - great for a party.
