Bacon & Cheese Meatloaf

what you need
  • 4 slices Oscar Mayer Bacon
  • 1 1/2 lb. ground beef
  • 1 cup bread crumbs
  • 2 cups shredded cheddar, divided
  • 1 sm. onion
  • 2 Tbsp. Kraft Lite Mayonnaise
  • 3/4 tsp. salt
  • 1/2 tsp. ground pepper
  • 1 egg
  • Ketchup
make it
In skillet on medium heat cook bacon until limp, 3-4 minutes. Remove bacon put aside. In large bowl use your hands to gently but thoroughly mix together the meat, bread crumbs, 1 cup of cheese, onion, mayonnaise, salt, pepper, & eggs.

Pat the mixture into a ball, put in pan. Spread top of loaf with ketchup, & lay bacon over ketchup.

Bake until loaf is firm no pink in the middle, 1 hr. 30 min. Last 5 min. put remaining cheese on top.
