Bacon Macaroni Salad with Veggies

what you need
  • 7 eggs
  • 6-8 slices bacon
  • 2 boxes Kraft Macaroni and Cheese
  • 3-4 cups Miracle Whip Salad Dressing, divided
  • 1/2 cup sour cream
  • 1 cup mustard
  • 1 cup Kraft Shredded Mozzarella Cheese
  • 5-6 mini carrots
  • 1 medium green bell pepper
  • 3-4 stalks celery
  • 1/4 tsp. pepper, garlic powder, salt
  • 2 tsp. paprika

First, take a sauce pan and fill it three quarters of the way with water and the eggs, and boil until they are hard-boiled; about 20-30 minutes. In the meantime, use a medium sized frying pan and fry bacon until crispy.

In another sauce pan, fill to about three quarters of the way with water and bring to a boil. When the eggs are hard boiled, rinse thoroughly with cold water for about 3-5 minutes and then set them aside to cool. Once the other saucepan is boiling, add 2 boxes of uncooked Kraft Macaroni and Cheese noodles. You can reserve the cheese sauce for later use. Cook noodles for about 7 minutes until al-dente and then drain in a colander and rinse with cold water. Transfer cooled noodles to a large mixing bowl.

Once the bacon is crisp, remove from the pan and place on a plate on top of a paper towel to draw out the grease. Once cool, crumble into small pieces. Add to the large mixing bowl with noodles, 2-3 cups of Miracle Whip Salad Dressing, sour cream and mustard. Mix thoroughly until all noodles are saturated.

Next, peel the hard-boiled eggs and slice and dice into tiny slices and add to the bowl. At this point, you can also add your crumbled pieces of bacon and shredded mozzarella cheese. Stir thoroughly until all ingredients are blended. Next, chop your mini carrots into finely chopped pieces and add to the mix. You will now chop your green pepper and celery into small pieces and add that to the bowl. Then, add the additional Miracle Whip and any extra mustard or sour cream as you would prefer, as well as the pepper, garlic powder and salt. Again, stir thoroughly and add additional Miracle Whip to taste. Top with the paprika and put in the refrigerator for at least 2 hours until cold. Stir and serve!
Notes
You can make this recipe healthier by using Light Miracle Whip and Light Sour Cream. You can also add 1-2 cups of drained tuna in water to the mix and then put on a bun topped with tomato and lettuce for a great sandwich! Further, you can sprinkle parmesan cheese on top for added flavor!
