Bacon Quiche Biscuit Cups

what you need
  • 1 pkg. (8 oz.) cream cheese, softened
  • 2 Tbsp. milk
  • 2 eggs
  • 1/2 cup shredded Swiss cheese
  • 2 Tbsp. chopped green onions
  • 1 can (10 oz.) biscuits
  • 5 slices bacon, cooked and crumbled, divided
make it
Preheat oven to 375°F. Grease 10 muffin cups. Beat cream cheese, milk and eggs until smooth. Stir in Swiss cheese and green onions.

Press 1 biscuit in each muffin cup. Put 1/2 of crumbled bacon evenly into cups. Spoon in 2 Tbsp. of cheese mix into each cup.

Bake for 21 to 26 minutes or until biscuits brown and mix is set. Sprinkle with remaining bacon and serve!

Rated  by sadieburks1 on 7/1/2008 Easy to prepare! Great for kids (they can help make it too) and adults alike as it's fun to eat. I will soon be trying it for brunch with my extended family and making 2 versions, a sweet & a savory. We added jam to the biscuit after I baked it, next time I will spread a layer of jam on the biscuit before baking.
