Bacon-Wrapped Stuffed Chicken Breasts

what you need
  • 12 strips Oscar Mayer Turkey Bacon
  • 1 pkg. skinless thin sliced chicken breasts (containing about 4-6 breasts)
  • 4-6 tsp. store bought pesto (you will need 1 tsp. of pesto per piece of chicken)
  • 4-6 tsp. reduced fat feta cheese
  • 1 large red pepper, sliced into thin strips

Preheat oven to 375°F. Pan-cook bacon 2 minutes on each side, then set aside (the bacon will cook the rest of the way in the oven).

Lay each piece of chicken on a shallow baking pan lined with tin foil. Spread a teaspoonful of pesto out onto each piece of chicken, and then sprinkle the feta on each piece. Place a couple strips of pepper in the center of each chicken breast. Carefully roll each chicken breast. Then, wrap each chicken breast with two slices of bacon.

Pop it in the oven and set the timer for 30 minutes! When it comes out the bacon will be crisp, the chicken will be cooked and will have absorbed a lot of yummy flavor!
