Baked Peach French Toast

what you need
  • 6 thick slices whole grain bread
  • 8 oz. cream cheese
  • 6 med fresh peaches, sliced
  • 1/2 cup milk
  • 1/2 cup buttermilk
  • 1/3 cup maple syrup
  • 3 eggs
  • 2 Tbsp. butter, melted
  • 1 Tbsp. sugar
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 Tbsp. coffee flavored liqueur - optional
  • 1/2 cup chopped pecans
make it
Preheat oven to 400 degrees. Lay bread in 13x9 pan that has been buttered or coated. Prick bread 3-4 times. Spread layer of cream cheese on top of each bread slice. Arrange peach slices on bread to cover bread.

In bowl, combine milk, buttermilk, maple syrup, eggs, butter, sugar, cinnamon, vanilla, and liqueur and mix. Pour over bread. Liquid should come to tops of bread. Sprinkle pecans over peaches.

Bake 30 minutes or until bread is no longer soggy and begins to brown on edges.
Notes
Assembled French toast may be refrigerated in quid for hours or overnight before baking. Apple slices may be substituted for peach slices.
