Baked Salmon with Vinaigrette Medley

what you need
  • 1/4 cup pitted black olives, chopped
  • 3 small tomatoes, canned or fresh, chopped
  • 1/4 cup KRAFT Vinaigrette Dressing of your choice
  • 1 salmon fillet (1 1/2-2 lbs.)
  • 1 small can mushrooms, drained
make it
COMBINE olives, tomatoes, and vinaigrette in a bowl, set aside.

PREHEAT oven to 400 degrees F. Place salmon skin side down in shallow baking dish, spray pan with cooking spray if needed.

ADD mushrooms to vinaigrette mixture, spoon over salmon.

BAKE 18 to 23 minutes or until salmon flakes easily with fork.
Mushroom rice and green beans top off the meal.
