what you need
- 1 pork loin (2 1/2-3 lb.)
- 1 box Stove Top Stuffing
- 2 pkg. pork or turkey gravy mix
make it
Freeze loin for 30 min for ease of slicing or slice when almost thawed. Cut into 12 slices about 1/4" thick. Make Stove Top Stuffing mix according to box directions.
Place 6 slices of pork loin in a 9x13-inch glass or stoneware baking pan. Put 1 ice cream scoop of stuffing on each and top with another chop on top. Make gravy according to package direction and top all chops with gravy.
Bake 30 min at 375°F covered. Uncover and let stand 5 min. Serve.
Notes
The turkey gravy I feel works best. When baked, it tastes like pork not turkey.
I serve this with broccoli or green beans and/or salad.
You can use loin chops instead of whole loin slicing, but I find I save a few dollars by slicing it myself. The meat is very tender and always juicy.
