Baked Tilapia with Parmesan Bread Crumbs

what you need
  • 4 tilapia fillets (about 3 pounds total)
  • Salt & Pepper
  • 1 teaspoon Parsley flakes
  • 1 cup freshly grated parmesan cheese
  • 3/4 cup fresh bread crumbs
  • 5 Tablespoon melted butter
  • 3 Tablespoon olive oil
make it
Preheat oven to 420 degrees. In a baking dish, season the fillets with salt and pepper and parsley flakes.

Combine the parmesan with the bread crumbs, melted butter and olive oil. Then sprinkle over the fillets

Bake for 15-20 minutes, or until the fish is cooked and the topping is golden. Let it cool down for couple minutes before serving.

Rated  by a cook on 9/6/2012 This recipe was too dry even after adding extra butter and olive oil. Topping wouldn't stay together and didn't stay on tilapia. Basically ended up with "naked" fish and topping all over the pan. Horrible.
