Banana Bread with Apricots & Nuts

what you need
  • 3 medium ripe bananas
  • 1 cup sugar
  • 2 large eggs
  • 1/4 cup butter, softened
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional ingredients:
  • 1/2 cup chopped dried apricots & 1/2 cup sugar glazed pecans or
  • 1 cup fresh blueberries or
  • 1/2 cup macadamia nuts & 1/2 cup coconut & 1/2 cup crushed pineapple
make it
Preheat oven to 350°F. Grease a 9x5x3 inch loaf pan. Mash bananas in a large bowl. Add sugar, eggs, butter, oil, and vanilla. Add dry ingredients to banana mixture. Fold chopped dried apricots and nuts into batter.

Spread batter evenly into prepared pan.

Bake 1 hour or until cake tested comes out clean. Cool 15 minutes in pan, then remove to cool on rack. Sprinkle with powdered sugar before serving.
Notes
Chop apricots with small kitchen scissors. Purchase sugar glazed pecans.
