what you need
- 1/2 cup oil
- 1 cup sugar
- 2 eggs, beaten
- 3-4 ripe bananas, mashed
- 2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3 Tbsp. milk
- 1/2 tsp. vanilla
- 1/3 cup sour cream
- 1/4 tsp. cinnamon
- 1/2 cup chopped nuts
make it
Beat oil and sugar together; add eggs and bananas and beat well. Add dry ingredients, milk, vanilla, sour cream, cinnamon and beat well. Stir in nuts.
Pour into a well-greased loaf pan.
Bake at 350 degrees F for 1 hour (crack in center must test 'done').
Notes
When our bananas become too ripe, we throw them in the freezer and use specifically for this recipe. It makes a smoother batter and sweeter flavor.
My family enjoys this dripping with melted butter...YUM!
