Makes: 8 servings Total Time: 1 hr 30 min
Category: Breads Sub Category: Quick Breads

what you need
  • 1/4 lb. margarine
  • 2/3 cup sugar
  • 2 eggs, unbeaten
  • 1 1/3 cup mashed bananas (3)
  • 2 cups flour
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 to 1/2 cup chopped nuts or chocolate chips (optional)
make it
1. Heat oven to 350 degrees F. Lightly grease 1 1/2 quart casserole. In large saucepan, over low heat, melt margarine; remove from heat. Stir in sugar, unbeaten eggs, mashed bananas, then flour, baking soda, baking powder and salt. Blend. Stir in nuts or chocolate chips, if desired.

2. Pour batter into prepared casserole dish.

3. Bake 60 minutes, or until toothpick inserted comes out clean. Cool 10 minutes, then remove from casserole.
Moist, delicious, easy to make. Vary the taste with different add-ins [i.e. dried cranberries, different flavor chips (butterscotch; peanut butter; milk, semi-sweet or white chocolate chips), different nuts (pecans, walnuts, peanuts)].
