Banana Raisin Dessert Bread

what you need
  • 2/3 cup raisins
  • 1/3 cup brandy
  • 1 tsp. almond extract
  • 3 bananas, mashed
  • 3/4 cup packed light brown sugar
  • 1/3 cup vegetable (or virgin olive) oil
  • 2 eggs, beaten
  • 3/4 cup all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. ground allspice

Preheat oven to 350 degrees. Grease and flour a 5 x 9 inch loaf pan.

Combine raisins, brandy and almond extract in a small saucepan and bring to simmer over medium-low heat for just a few minutes. Remove from the heat and set aside to cool for 15 minutes.

In a mixing bowl, blend bananas, sugar, oil and eggs with an electric mixer for just a minute or so. Sift together remaining dry ingredients into the batter mix and mix together with a large wooden spoon until blended. Lastly, add the brandied raisins and gently blend into the mix.

Pour the mix into the loaf pan, and bake for one hour, or until a toothpick inserted into the loaf, comes out clean. Allow the loaf to cool in the pan for 15 minutes; then, turn out the loaf to cool completely on a wire rack. Wrap in plastic wrap to ensure freshness.
Makes a moist loaf, great for an afternoon tea or dessert.
