what you need
  • 2 lb. cooked ground chuck
  • Onions
  • 3 pkg. taco seasoning
  • 1 jar nacho cheese sauce
  • 1 large box Spanish rice
  • 12 soft flour tortillas
  • 2-3 pkg. sharp and medium shredded cheddar cheese
  • 1 can tomato sauce (plain or flavored like meatloaf sauce)
  • 1 container (16 oz.) sour cream
  • Lettuce, tomato, green onions, sour cream, to garnish
make it
Prepare meat with onions minced or frozen, and then drain fat off. Add taco seasonings and slowly cook until desired consistency, maybe about an hour. When done add a couple of tablespoons of mild nacho cheese sauce to mixture stir in and simmer 10 min. When done, set aside. Meanwhile cook Spanish rice according to box directions. When done set that aside.

Take a 9x12-inch glass pan and put a layer of beef mixture on the bottom. Lay out each flour tortilla add 2 tablespoons of beef mixture down the middle of tortilla, sprinkle shredded cheese, rice, add your choice of how much nacho cheese sauce and sour cream. Fold sides and fold over seam side down in pan. Add tomato sauce plain or a flavored such as meatloaf sauce over the top, sprinkle shredded cheese on top.

Bake at 350 for about 45 minutes to an hour. Take out, cool, add garnishment as desired, and enjoy. Each is very filling.
