Best Ever Easy Sugar Cookies

what you need
  • 1 cup softened butter
  • 1 cup powdered sugar
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 tsp. lemon or vanilla extract
  • 4 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 1 tsp. coarse salt
  • Chocolate chips and/or nuts, if desired
  • 1 cup superfine sugar, for rolling
  • Colored sugar for garnish if desired

Preheat over to 375°F. Cream first 4 ingredients together. Add eggs and extract. In a separate bowl, mix the flour, baking soda, cream of tartar & salt. Add slowly to creamed mixture. Add chocolate chips or nuts if desired.

Form dough balls the size of a quarter. Roll in superfine sugar. Place on cookie sheet and flatten slightly with bottom of a glass dipped in sugar. If desired, sprinkle colored sugar on top of cookies.

Bake for 8 to 10 minutes. Do not let edges brown. Cool on rack.
These are a very delicate, crispy sugar cookie. Excellent!!!! Recipe makes a lot and doesn't require time consuming rolling out and cutting shapes.
