Bex' Stuffed Meatloaf

what you need
  • 2 Tablespoons Worchestershire sauce
  • 2 beaten eggs
  • 3/4 cup milk
  • 2 cups soft bread crumbs
  • 1/4 cup chopped onion
  • 2 Tablespoons snipped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon dried crushed oregano
  • 1 1/2 lbs. ground beef
  • 1 cup cooked Minute Rice
  • Frozen Broccoli Florets
  • Shredded Kraft Cheddar cheese

In a large bowl combine Worcestershire sauce, eggs, milk, bread crumbs, onion, parsley, salt, oregano, and ground beef. Mix well. Place parchment or wax paper over counter (for sanitation) and place meat mixture in the middle. Place another large sheet of parchment or wax paper over top. Use a rolling pin to roll meat into a rectangular shape just slightly bigger than the bread loaf pan that you are using (you may have to use two pans depending on their size).

Take off top paper. Place 1 cup of rice in the middle and spread leaving about 1-1/2 inch from each edge without filling. Spread frozen broccoli over top of the rice, and the same with the shredded cheddar cheese. Take the edges and tuck them in. Roll tightly from short end to short end so that the length will fit into your loaf pan (s), seem side down.

Bake in 350 degree oven for 1 hour 10 minutes or until internal temperature registers 160 degrees. If desired: pour catsup, mustard or your favorite BBQ sauce over the top and cook for another 10 minutes.
Add or substitute filling with your favorite veggies. They work great.
