Big Bran Muffins

what you need
  • 5 cups flour
  • 3 cups sugar
  • 1 box bran flake cereal
  • 4 eggs
  • 1 cup oil
  • 1 qt. buttermilk
  • 1 1/2 tsp. salt
  • 5 tsp. baking soda
  • Optional: cinnamon, nutmeg, vanilla, nuts, apple, cranberries, blueberries, banana
make it
Mix together in a large bowl. Take out a portion of the batter, add fruit if desired.

Put in muffin tins.

Bake time is variable to the size of muffins. Bake at 350°F Texas muffins approx. 15 minutes.
Put the rest of the batter in refrigerator. Keeps up to 2 weeks. Just take out what you need, add a different fruit or nut each time, or none at all.

Rated  by kremkow on 3/2/2009 Nice and moist, easy to do (but keepsoeone with big arm muscles nearb - it's hard to stir!). I added chocolate chips to the first batch, blueberries to the second, and a plain third batch.
