Black Bean Chocolate Brownies

- 6 Tbsp. Dutch-process cocoa powder
- 1/4 tsp. baking powder
- 1/4 cup all purpose flour
- 3/4 cup drained black beans
- 3 Tbsp. melted butter
- 2 large eggs
- 1 tsp. vanilla
- 1/2 cup Splenda sugar blend for baking
make it
1. Preheat oven to 325. Spray an 8x8 baking pan with nonstick baking spray.
2. In a small bowl, combine cocoa powder, baking powder, and flour; set aside.
3. Place beans and melted butter in a food processor and puree until beans are completely smooth (like a thick paste). Scrape into a medium sized bowl.
4. With a spoon, beat in eggs, vanilla, and Splenda until well mixed. Add cocoa mixture and stir just until incorporated.
5. Spread evenly in prepared pan and bake for 13-15 minutes or until the center just springs back when touched (do not overbake).
Notes
Unbelievably, pureed black beans make these chewy brownies dark, moist and fudgey, without any trace of bean flavor.
