what you need
- 1 can (15 oz.) diced tomatoes, drained
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1 can (15 oz.) black beans, drained
- 1 teaspoon chili powder
- 1/4 teaspoon cumin
- 1 jar (8 oz.) roasted red peppers, drained
- 1 medium onion, sliced
- 1 teaspoon olive oil
- Salt & pepper
- 4 (6-inch) flour tortillas
- Garlic powder
- Italian seasoning
- 1 pkg. (16 oz.) Kraft Shredded Mozzarella Cheese

Preheat oven to 400 degrees F. Spray large baking sheet with cooking spray. In small pan, combine diced tomatoes, garlic, and Italian seasoning. Cook for about 5 minutes. Set aside and cool. In small microwaveable bowl, mash black beans and add chili powder and cumin, stirring to combine. Microwave on high for 1 minute/30 seconds. Chop red peppers and add to sliced onions. Saute in 1 teaspoon olive oil until onions are soft. Add salt and pepper to mixture and set aside.
To assemble pizzas, place tortillas on sprayed baking sheet. Layer with tomato mixture, black bean mixture, and red pepper and onion mixture. Sprinkle with extra garlic powder and Italian seasoning. Top each with as much mozzarella cheese as desired.
Bake for about 10 minutes or until cheese melts.
Notes
We like to cut these pizzas into small wedges and serve with snacks along with salsa and corn tortilla chips and small wedges of Kraft Jalapeno Pepper Cheese with apple slices and snack crackers.
