what you need
- 1 can (16 oz.) black beans, drained and rinsed
- 1 large tomato, seeded and chopped
- 1/2 cup purple onion, chopped
- 4 green onions, chopped
- 2 tsp. fresh cilantro, chopped
- 2 tsp. olive oil
- 1 1/2 tsp. fresh lime juice
- 1 tsp. red wine vinegar
- 1/4 tsp. salt
- 1/4 tsp. pepper
make it
Mix the vegetables and cilantro in a medium bowl.
Mix olive oil, lime juice, vinegar, salt, and pepper in a small bowl until emulsified.
Mix dressing with vegetables. Cover and refrigerate for a minimum of 2 1/2 hours before serving.
Notes
2 Roma tomatoes are great substitutes when tomatoes are out of season.
I typically double the recipe, since it keeps well in the fridge for up to a week.
It's a great, healthy snack with tortilla chips!
