Black Bean Veggie Chicken Chili

what you need
  • 1 can black beans
  • 1 can chili beans
  • 1 can light red kidney beans
  • 1 can regular beans (no pork)
  • 1 can black olives (optional)
  • Approx. 1/2 cup water
  • 8-10 chicken strips, cut into smaller bite-size pieces
  • Celery, diced
  • Sweet onion, diced
  • Diced red & green pepper
  • 1/2 tsp. paprika
  • 1/2 tsp. sea salt (optional)
  • 1-2 Tbsp. chili powder
  • 1/8 red ground pepper
make it
Mix all beans and black olives, add water. Cut up chicken strips and toss in. Dice celery, onions, and peppers; add to pan. Add seasoning to taste.

Bring to a slow boil, stirring occasionally to prevent sticking.

Reduce heat and simmer for approx. 30 minutes stirring occasionally.
