Blender Banana Bread

what you need
  • 2 large ripe bananas, sliced
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 tsp. baking soda
make it
In blender combine sliced bananas, eggs and oil. Blend until smooth. In mixing bowl combine flour, sugar and baking soda. Mix together with rubber spatula. Add banana mixture to dry ingredients. Stir until combined.

Spray 2 (4-1/2" x 8") loaf pans with vegetable spray and dust with flour. Divide batter between the two pans.

Bake in a preheated oven @ 350 degrees for approximately 30 minutes or until done. Cool on wire racks for 15 minutes before removing from pans.
Notes
I recently used sugar to dust the pans instead of flour and got rave reviews from co-workers when I took this to work.
