Blondie's Tomato Pie

what you need
  • 3 tomatoes (peeled if you like, I don't), sliced 1/4-inch thick
  • 1/2 teaspoon salt
  • Canned milk
  • 1 prepared deep dish pie shell
  • 1/4 tsp. pepper
  • 1/2 teaspoon basil (I like fresh chopped and often use a little more)
  • 1/4 cup chopped raw sweet yellow onion
  • 1/2 cup mayo
  • 1 1/2 cup grated cheddar cheese
make it
30 minutes or more before putting together, put tomato slices between paper towels and press to remove as much juice as you can. I add the salt to the tomatoes now to leach out as much moisture as possible. Brush crust with canned milk. Bake 425 degrees for 5 min F. Reduce heat to 400 degrees F.

Combine salt, pepper, basil & onion. Layer tomatoes on bottom of crust sprinkle with the salt, pepper, basil & onion mixture. Mix the mayo and cheddar cheese together and spread over the tomatoes. Be sure to seal the edges.

Bake 35 minutes at 400 degrees F.
Notes
Important not to use your good salad or sandwich tomatoes (far too juicy), use the cardboard variety at the grocery store.

Great Meatless Main Dish. Add a salad and some smashed new baby red potatoes. Boston Cream Pie for dessert!
