what you need
  • For The Cake:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 stick butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 pint fresh blueberries
  • For The Topping:
  • 1/2 stick soft butter
  • 1/2 cup brown sugar
  • 1/3 cup all purpose flour
  • 1/2 teaspoon cinnamon
  • 1/2 cup heavy cream
make it
Preheat oven to 375 degrees. In a bowl, sift the flour, baking powder and salt and mix well. Set aside. In another bowl, cream the butter and sugar until fluffy; beat in the egg and fold in the flour mixture slowly. Gently add blueberries and mix well.

Pour this batter into a prepared cake pan. Meanwhile, in a bowl, mix the crumb mixture with a fork and sprinkle this over the cake.

Bake for one hour then test with a toothpick; if it comes out clean then it is done.
Let cool for 15 minutes then un-mold and slice. Serve warm with whipped cream.
