what you need
- 2 cups flour
- 1/4 cup wheat flour
- 2 Tbsp. sugar or Splenda
- 2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. cinnamon (optional)
- 2 lg. eggs
- 4 Tbsp. melted butter or oil
- 2 cups buttermilk
- 1 1/2 cups blueberries
make it
Mix dry ingredients together in large bowl. Mix eggs, butter and buttermilk in small bowl. Make depression in dry ingredients and add liquid mix. Stir until moist -- some lumps will remain. Add water if needed to get correct consistency. Do not over mix. Gently stir in blueberries.
Pour about 1/3 cup onto lightly greased griddle.
Cook about two minutes on both sides until golden brown serve hot.
Notes
Whole wheat flour is used for its texture. May use all purpose flour instead.
