Brenda Lynn Brooker's Super Creamy Italian Pasta Salad

what you need
  • 4 cups rotini pasta, cooked
  • 2 cups broccoli florets
  • 1 cucumber
  • 1 pint grape tomatoes
  • 2 avocados
  • 2 cups summer sausage, diced
  • 1 & 1/2 cups Monterey jack cheese crumbles or cubes
  • 2 cans (2 & 1/4 oz.) sliced olives
  • 1 cup Miracle Whip
  • 1 cup roasted red pepper Italian with parmesan salad dressing
make it
Cook pasta 10-15 minutes or until done; drain. Cook broccoli 5-7 minutes or until tender.

Peel cucumber & dice, halve tomatoes, pit & dice avocados, dice summer sausage, cube the cheese if crumbles can't be found.

In a large bowl combine pasta, broccoli, cucumbers, tomatoes, olives, salami & cheese. Toss to combine.

In a small bowl combine Miracle Whip & salad dressing; whisk together to combine. Pour over salad, toss to combine everything. Cover & refrigerate 2 hours; then serve.
Serve with your choice of chicken, steaks or burgers.
