what you need
- 4 to 6 chicken leg quarters
- Salt & pepper
- Basting sauce:
- 1/2 cup stick margarine
- 4 Tbsp. lemon juice
- 2 Tbsp. Worcestershire sauce
- 1 Tbsp. prepared yellow mustard
- Dash of red hot sauce
- Dash of salt, pepper, and garlic powder
make it
Preheat broiler in oven. Lightly salt and pepper chicken pieces and place on broiler pan. Broil chicken pieces about 6" from heat approximately 7 to 8 minutes; turn chicken and cook another 7 to 8 minutes. Chicken should not be pink on the inside and skin golden brown (may use a meat thermometer if desired--be sure to not touch the bone)
While chicken is cooking, melt margarine in small saucepan. Stir in remaining basting ingrdients and let simmer till chicken is done.
When chicken is done, remove from oven and baste the chicken with the sauce. Return chicken to oven and let cook another 3 to 5 minutes. Watch carefully because chicken will easily burn. Remove chicken from oven and turn chicken pieces over and baste other side of chicken with basting sauce. Chicken will be crisp on the outside and moist and tender on the inside. Enjoy!
