Makes: 2-4 servings Total Time: 30 min
Category: Side Dishes Sub Category: Other

what you need
  • 2 med. potatoes
  • 3 Tbsp. margarine
  • Iron skillet or cookie sheet
make it
Preheat oven to 350. Wash and cut potatoes in half. Lightly spray cooking oil in iron skillet or on cookie sheet.

Divide margarine so each half of potatoes can lay on top of equal amount. Season with favorite seasoning.

Then place on top rack, bake for 30 minutes, or until fork slides in and out of potatoes easily.
Notes
One evening the steaks on the grill was cooking faster than the potatoes, so instead of pulling the potatoes out and nuking them, I sliced in half and did the above, found the potatoes to be far better tasting than the old fashioned way. It tastes like a baked fried potato. I use a non trans fatty acid buttery spread that can be used for cooking with greek seasoning on mine. I like the Iron skillet over the cookie sheet. For some reason it browns more even and seems to cook faster. I' ve cooked up to 6 potatoes and had the same time as with 2 potatoes. Larger potatoes only took an extra 10 minutes more or less.
