Can't-Say-No-To-Em Peanut Butter Pancakes

what you need
- 1.5 cups flour (I used whole wheat)
- 6 Tbsp. sugar (I used raw)
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1.5 cups milk (I use vanilla almond milk)
- 1/2 cup peanut butter
- 1/2 tsp. favorite extract (I used almond)
- 2 eggs or equivalent egg substitute, very well beaten
- Oil, for griddling

Combine all dry ingredients in a largish bowl.
Add remaining items in the order listed and blend until very well combined and smooth.
Pour 1/4 cup of the batter (that's one pancake, approx.) at a time into well-oiled griddle or pan and cook until edges bubble, flip, repeat, enjoy!
Notes
Can be served with fresh fruit, jam, syrup, or your favorite yogurt.
