Can't-Say-No-To-Em Peanut Butter Pancakes

what you need
  • 1.5 cups flour (I used whole wheat)
  • 6 Tbsp. sugar (I used raw)
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1.5 cups milk (I use vanilla almond milk)
  • 1/2 cup peanut butter
  • 1/2 tsp. favorite extract (I used almond)
  • 2 eggs or equivalent egg substitute, very well beaten
  • Oil, for griddling
make it
Combine all dry ingredients in a largish bowl.

Add remaining items in the order listed and blend until very well combined and smooth.

Pour 1/4 cup of the batter (that's one pancake, approx.) at a time into well-oiled griddle or pan and cook until edges bubble, flip, repeat, enjoy!
Can be served with fresh fruit, jam, syrup, or your favorite yogurt.
