what you need
  • 8 large garlic cloves
  • 2/3 cup ancho chile powder (about 2 ½ oz.)
  • 3 Tbsp. (packed) golden brown sugar
  • 2 Tbsp. ground black pepper
  • 4 tsp. dried oregano (preferably Mexican)
  • 4 tsp. ground cumin
  • 4 tsp. salt
  • 1 tsp. ground cinnamon
  • 5 lb. skirt steaks, cut into 6-inch lengths
  • Nonstick vegetable oil spray
  • Warm corn tortillas
  • Purchased tomatillo salsa
make it
Press garlic through garlic press into small bowl. Mix in chile powder, brown sugar, pepper, oregano, cumin, salt, and cinnamon.

Spread spice rub evenly over both sides of the steaks. Arrange steaks on large rimmed baking sheet. Let stand 1 hour.

Spray grill rack with nonstick spray. Prepare barbeque (medium-high heat). Grill steaks to desired doneness, about 4 minutes per side for medium-rare. Transfer steaks to board; let rest for 10 minutes. Cut steaks crosswise into 1/2 –inch-wide strips. Transfer steak strips to large bowl. Serve with warm tortillas and tomatillo salsa.
