what you need
  • 2 sticks butter
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • 2 cups flour, plus more for flattening cookies
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 teaspoon ground ginger
  • 2 cups old fashioned rolled oats
  • 1 1/2 cups finely grated carrots (3 large carrots)
  • 1 cup raisins
make it
Beat butter and both sugars till fluffy. Add eggs and vanilla. Sift flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Gradually add to butter mixture. Mix in oats, carrots & raisins. Chill till firm about 1 hr.

Preheat oven to 350°F. Shape tablespoons of dough into balls 2 inches apart.

Bake until brown and crisp 12-15 min. Frost with 2 tsp. cream cheese frosting.
