Catherine's Comfort Casserole

what you need
  • 1 Tbsp. olive oil
  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 1 1/2 pound ground round
  • 1 can tomato soup
  • 1 can water
  • 1 can whole kernel corn OR 1 1/2 cup frozen corn
  • 2 cups cooked elbow macaroni
  • Shredded cheese, if desired
make it
Heat oil in a large skillet over medium heat. Saute onions until translucent. Add green pepper and cook until soft. Add ground round and brown (make sure meat is thoroughly cooked). Add tomato soup and water, stirring to combine.

When mixture starts to bubble, reduce heat to low and add corn; cover and cook until heated through or until done (if using frozen corn). Stir in noodles, and cook about 5 more minutes. Top with shredded cheese.

Remove from heat, and cover for about 5 minutes, or until cheese begins to melt.
This was our favorite comfort food growing up, and I still prepare this meal when I've had one of those days!

My family loves a lot of noodles and corn in this dish; you may adjust amount to your family's preferences.

This is also a great recipe to use up leftover corn and noodles!
