Cheese Tortellini and Sausage Soup

what you need
  • 1 lb. Italian sausage
  • 1/2 onion, chopped
  • 1 tsp. garlic, minced
  • 5 cups of beef broth/stock
  • 1 can (8 oz.) tomato sauce
  • 2 cups carrots, diced
  • 1 medium zucchini, diced into quarters
  • 1 cup water
  • 2 Tbsp. grated parmesan cheese
  • 1 Tbsp. Italian seasoning
  • 1 pkg. (9 oz.) cheese tortellini
make it
Brown sausage with onion and garlic in a Dutch oven or large pot, drain and return to pan.

Add beef broth, tomato sauce, carrots, zucchini, water, parmesan cheese and seasonings, simmer 30 minutes at least.

Bring soup to a steady boil, add the tortellini cook 10 additional minutes and serve immediately.
Notes
Serve with warm rosemary bread and olive oil. YUM!

This recipe is good for leftovers too!
