Cheesy Veggie Bake

what you need
  • 2 yellow squash, sliced
  • 2 zucchini, sliced
  • 1 green pepper, diced
  • 5 mushrooms, sliced
  • 1 cup broccoli, stems separated
  • 1 med. tomato, diced
  • 1 cup fresh green beans
  • 1 Tbsp. Mrs. Dash vegetable supreme
  • 8 oz. low fat mozzarella cheese, grated
make it
Slice squash, zucchini, green pepper, mushrooms, broccoli, tomato and green beans. You can substitute cauliflower if you wish.

Throw vegetables in a glass baking dish, sprinkle with Vegetable Supreme. Top with cheese.

Bake in 375ºF oven until cheese is melted and bubbling (approx. 30 minutes).
I use canned mushrooms; I never liked the taste of fresh.
