what you need
  • 1 1/2 cups shortening or 1 cup shortening & 1 stick butter
  • 3 cups sugar
  • 6 eggs
  • 1/2 tsp. almond extract
  • 1/2 tsp. vanilla
  • 1 1/4 cups plain flour
  • 3/4 cup milk
  • 1/2 (10 oz. jar) maraschino cherries, chopped
  • Cherry Frosting:
  • 8 oz. cream cheese, softened
  • 4 oz. butter, softened
  • 1 1/2 lb. powder sugar
  • 1/2 (10 oz. jar) maraschino cherries, chopped
  • 1/2 cup chopped pecans & coconut (optional)
make it
Cream together shortening and sugar; add eggs one at a time. Mix well with each egg. Add flavors, add flour alternately with milk, mixing well with each addition, finishing with flour. Stir in cherries.

Spoon into well greased and floured tube pan. Do not preheat oven. Bake for 2 1/2 hours at 275°F. Cool.

Frost with cherry frosting. Use cherry juice to color and thin frosting to correct consistency for spreading.
