Chicken and Artichoke Over Rice

what you need
- 4 chicken breasts cut into strips, seasoned to taste
- Olive oil
- 1 small onion, diced
- 2 cloves garlic
- 1 can stewed tomatoes
- 1 can chicken stock
- 1 pkg. baby shitake mushrooms
- 1/2 cup white wine
- 1 can artichoke hearts, drained
make it
Brown chicken in olive oil and add onion and garlic.
Add tomatoes, chicken stock, mushrooms and wine & bring to a boil.
Simmer for 45 minutes or until most of the sauce evaporates. Before the last 20 minutes stir in artichokes and serve over rice.
Notes
I use the stewed tomatoes with jalapenos.
