Chicken Garden Stir-Fry

what you need
  • 2 or 3 Tbsp. olive oil
  • 1 boneless, skinless chicken breast, cut into julienne strips (marinated in a Lemon Pepper marinade for at least 15 minutes)
  • 1 small yellow squash, cut into strips
  • 1 small zucchini, cut into strips
  • ½ med. red bell pepper, cut into strips
  • ½ med. onion, sliced into thin wedges
  • 2 tsp. parsley flakes
  • 1-1/2 tsp. Italian Seasoning
  • ½ tsp. salt
  • ½ tsp. garlic powder
  • 1/8 tsp. pepper
  • 1/2 lb. spaghetti, cooked
make it
In large skillet, heat oil. Add chicken; stir-fry until no longer pink.

Add veggies; stir-fry just until tender crisp. Stir in all of the seasonings.

Add to spaghetti; toss to mix. Serve immediately, or refrigerate and eat cold.
