Chicken with Green Olives

what you need
  • 1/4 cup olive oil to fry
  • 2 cloves garlic, minced
  • 1-2 large Spanish onion(s), sliced
  • 1 whole chicken, cut up in pieces
  • Salt and pepper to taste
  • 1 teaspoon ground oregano
  • 1 tsp. crushed red pepper (optional)
  • 1 each small/baby yellow, red, and green peppers sliced (optional)
  • 1 small jar green Spanish olives, not drained
  • Add 1.5 cups white vinegar and 2 cups of water
make it
Place oil in frying pan, sauté garlic and onions until lightly golden, remove and save.

Place chicken parts in oil, brown well and season with salt, pepper, oregano, red pepper, then add sliced yellow, red and green pepper, sautéed onions and garlic and green olives and white vinegar and water.

Cover and simmer chicken for 50 minutes, or until tender.
Serve with Mexican-style rice or steamed white rice.
