Chicken, Potatoes and Peas

what you need
  • 2 tablespoons olive oil
  • 1 family pack chicken leg quarters (legs and thighs)
  • 5-6 medium potatoes, diced
  • 1 onion, finely chopped
  • 1/2 stick of butter, cut into pats
  • Garlic powder, turmeric, parsley, salt and pepper to taste
  • 1 can small peas
make it
Smear olive oil on the bottom of a Pyrex baking pan. Add chicken parts, potatoes, onion, butter pats and seasonings.

Place in a 425 degrees F oven for 45 minutes or until chicken is golden brown.

Then add 1/2 to a whole can of small peas and bake for an additional 10-15 minutes or until heated through.
Notes
Enjoy with a side salad and fruit cup for dessert to complete the meal.
